Starting with Central region which has historically been the region of Thai capital cities. Central cuisine is known for Royal cuisine, which originated from the food cooked in the palace. The beauty of the Royal cuisine is that the recipe differs, depending on which palace it is from. What is common, though, is the meticulousness of the ingredient selection, the arrangement of the dishes and the fruit and vegetable carvings.
The restaurant that has preserved the authenticity of Thai Royal cuisine is Bussaracum. The restaurant has been around for more than 30 years and you can sample many hard to find dishes. All the dishes are served in an old Royal style with beautifully presented side dishes.

North – Fai Sor Kam at Siam Paragon
This highly recommended Northern restaurant is located at the massive shopping mall in the heart of Bangkok. Stepping into Fai Sor Kam at Siam Paragon feels like being transported to a traditional Lanna house in North of Thailand.
The decor features unique cultural items from the North. Upon entering, you will be greeted with two Lanna-style lion statues. The food is classically Northern, guaranteed to taste exactly the same as what you can get in the North, without having to step out of Bangkok.

North Eastern – Somtum Der, Saladaeng Branch
North Eastern cuisine, or colloquially known as Isaan cuisine, is synonymous with intense flavour and fermented fish (or Plara in Thai).
Elephant Go Go’s favourite Isaan restaurant is Somtum Der at Saladaeng, which is the original branch of the restaurant before its international expansion to New York, Ho Chi Minh and Tokyo. Don’t miss the somtum here, which come in many varieties and all are delicious. The decor is Isaan modern.

Southern – BaanIce, Icon Siam branch
Southern cuisine is known for the spiciness from the various types of curry. Being close to the sea, Southern cuisine uses a lot of shrimp paste to flavour the dishes. The place to try Southern dishes in Bangkok is at BaanIce, Icon Siam.
BaanIce restaurant has served up spicy Southern dishes for more than 30 years. The popular restaurant gets its raw ingredients directly from the South. It still uses traditional cooking method which includes the use of rock mortar for making curry and cooking with charcoal stove.

Eastern – Supanniga Eating Room
Eastern cuisine typically mixes spices (such as black pepper) and fresh regional seafood. It also uses a lot of sweet and sour fruits as an ingredient in many of the savoury dishes.
Supanniga Eating Room is the place to try Eastern cuisine. The restaurants serves up delicious Eastern food and is cleverly decorated with a mix of modern and traditional Eastern objects.
The dishes feature unique and popular ingredients from the East as well as other delicacies from around the country. Some of the dishes can only be found at Supanniga. If you are looking to sample traditional Eastern cuisine, Supanniga should not be missed.
