Red — Panang Curry
Thai curry uses a base of curry paste, which is a blend of spices such as chilli, garlic, galangal, shallot and shrimp paste. Panang curry is made from mixing curry paste with coconut milk and meat. Panang curry is typically thicker than other types of curry and is one of the most common dishes you can find.

Green — Green Curry
Another famous Thai curry, aside from Panang, is Green Curry or known as Kang Kiew Waan in Thai.

Another interesting and colourful curry is Kang Som which means orange curry in Thai, signifying the dominant taste of this tangy curry.
Kang Som is a dish from Central Thailand and the sourness comes from the use of tamarind. The soup is usually made with fish or shrimp and seasonal vegetables, making it quite healthy.

Kang Karee is a dish that was brought into Thailand since Ayutthaya period. This type of curry uses intense curry paste and has a stronger aroma and taste than other curries. Kang Karee has been adapted to be less thick and more spicy for Thai taste.
